
Sterling Silver® Anniversary Roast

| 1/4 cup | olive oil |
| 1 tbsp | lemon juice |
| 2 | garlic cloves, minced |
| 1-1/2 tbsp | rosemary leaves |

| 1 tbsp | kosher salt |
*Based 7-8 lbs (3.2 – 3.6 kgs) roast, increase as necessary proportionate to roast size [e.g. a 14-16 lbs (6.4-7.2 kgs) roast would require double ingredient measures]
Place the roast in a shallow roasting pan and set aside for 30 minutes at room temperature. Preheat oven to 450°F (232°C).
Combine remaining ingredients. Rub the prime rib with mixture. Sear 15 minutes until the meat begins to brown.
Reduce heat to 325°F (163°C) and continue roasting, for a total cooking time of 20-22 minutes per pound.
Every half hour or so, baste the ends of the roast with the drippings. Use the meat thermometer about 30 minutes before the end of the roasting time. Make sure to insert it in the thickest part of the meat, not touching the fat or bone. When the internal temperature reaches 130°F (54°C), remove roast from the oven and cover lightly with foil.
Let the roast sit for 20-30 minutes. It will continue to cook during this time, reaching a temperature of about 135° (57°C) to 140°F (60°C). This resting period allows the juices and flavours to permeate the roast.
