Fish Frittata

| 4 cups | Mushrooms, sliced |
| 4 | Zucchini, thinly sliced |
| 4 | Onion, chopped |
| 1/2 cup | Gaylea Salted Butter |
| 24 | Large Eggs |
| 4 cups | Plain Yogurt |
| 4 cups | Bright Shredded Medium Cheddar |
| 1 tsp | Windsor Table Salt |
| 1 tsp | Club House Ground Pepper |
INSTRUCTIONS
1) In a large pan, stir-fry fillets, mushrooms, zucchini and onion in butter for 5-7 minutes, drain any excess liquid.
2) Beat together eggs and yogurt.
3) Stir in grated cheese and fish mixture, season with salt and pepper.
4) Pour into greased baking pans OR quiche dishes OR deep pie plates.
5) Bake at 350°F oven until set and golden brown. Time will vary depending on size of baking pans. Allow 30-35 minutes for 10" pan.
*You may substitute Salmon Loins, Haddock Loins, or Patagonian Fillets for the Cod
