Bacon Wrapped Pork Chops with Apricot Balsamic Glaze

| 2/3 cup | apricot jam |
| 1/2 cup | balsamic vinegar |
| 1 tsp. | freshly grated ginger |
| 4 | Maple Leaf bacon wrapped pork chops |
INSTRUCTIONS
Simmer jam, vinegar and ginger in saucepan, stirring occasionally, until glaze is reduced to about 1/2 cup, about 10 minutes. Cool to room temperature. Season pork chops with freshly cracked black pepper and sear in hot skillet until well browned on both sides. Brush one side of chop liberally with glaze and place in 350°F oven, for about 6 minutes. Turn and brush other side with glaze and cook for another 6 minutes. Turn until cooked to desired doneness, about 10 minutes. Serve pork chops on a bed of wild rice, tossed with currants and dried apricots.
