
Salmon Latkes with Spinach & Artichoke Dip

| 2 | large potatoes, shredded |
| 1 tsp | baking powder |
| 1 | egg |
| 1 x 8 oz | Summer Fresh Spinach & Artichoke Dip |
| 1/2 cup | all purpose flour |
| 4 tbsp | butter |
| 9 oz | smoke salmon slices |
Squeeze excess water out of shredded potato. Add potato, baking powder, egg, and half of the Summer Fresh Spinach & Artichoke Dip to a bowl and stir together. Add flour and continue to mix. (If mixture is too thin, add more flour to thicken).
In a non-stick skillet on medium heat, melt butter. Fry 3 Tbsp of latke batter at a time in the skillet for about 2 minutes per side.
Arrange fried latkes on a large serving plate, and top each one with a slice of smoked salmon, and a dollop of Summer Fresh Spinach & Artichoke Dip.
