English Style Battered Blue Cod

| 1/2 tsp. | freshly ground black pepper, plus more for seasoning |

| 1 12oz can | soda water |
| 1/2 cup | rice flour, for dredging (substitute all purpose flour, if unavailable) |

| vegetable oil for deep frying |
INSTRUCTIONS
Heat 3 inches of oil in a deep fryer to 325°F or in a deep pot to 375°F. In a mixing bowl, combine flour, baking powder, salt, parsley, egg and soda water and whisk to a smooth batter. Spread rice flour onto a plate. Dredge fish pieces in rice flour and then dip into batter, letting excess drip off. Carefully wave battered fish into bubbling oil before dropping into fryer or frying pan. Fry Toppits blue cod for 4 to 5 minutes until crispy and brown. Remove basket and drain fish on paper towel. Season lightly with salt and serve.
