Spicy Sauteed Haddock with Olives and Cherry Tomatoes

| 1/4 cup | olive oil |
| 4 | Toppits Haddock Loins |
| 6 tsp. | fresh parsley, chopped |
| 1/2 tsp. | dried crushed red pepper (optional) |
| 4 cups | cherry tomatoes, halved |
| 1 cup | Kalamata olives, chopped |
| 4 cloves | garlic, crushed |
| 5 tsp. | fresh basil or cilantro, chopped |
INSTRUCTIONS
Heat olive oil in large heavy skillet over medium-high heat. Sprinkle Toppits haddock fillets with salt and pepper. Add half of haddock fillets to skillet and sauté until just opaque in the center, about 3 minutes per side. Transfer haddock to platter. Repeat with remaining haddock. Add parsley and crushed red pepper to same skillet, and sauté mixture for 1 minute. Add tomatoes, olives, garlic and basil or cilantro. Sauté mixture until tomatoes are soft and juicy, about 2 minutes. Season sauce with salt and pepper & spoon over haddock. Serve and enjoy!
