Beer-Battered Blue Cod

Quantity Description
2 lbs Toppits Blue Cod Fillets (4-6 oz)
lemon juice
flour
salt and pepper, to taste
Batter
1 cup flour
1/2 tsp. salt
1/4 tsp. cayenne pepper
1 cup beer
1/2 cup peant oil

INSTRUCTIONS

Sprinkle Toppits blue cod fillets with lemon juice and roll in flour seasoned with salt and pepper. Prepare batter by combining flour, salt and cayenne pepper. Gradually blend in beer until thoroughly mixed. Cover and refrigerate for at least 2 hours. Heat oil in deep fryer to 375°F. Dip fillets in batter and fry until golden brown (4-5 minutes on average). Drain on paper towel to remove excess grease. Serve with hot sauce or tartar sauce.
