Pork Souvlaki Sandwich with Roasted Veggies and Hummus Recipe

 

Fresh and classic Mediterranean flavours are served on a tender ciabatta roll instead of in a traditional pita, making this a great grab-n-go lunch option.

Ingredients

2 zucchini, cubed (7.5 oz)

2 red bell peppers, cubed (6.3 oz)

1 eggplant, cubed (1 lb)

1 red onion, chopped (8.5 oz)

1/2 cup (4 oz) prepared balsamic vinaigrette

12 Ciabatta Rolls, White Premium

2 1/4 cups (1 lb) hummus

4 cups (6.4 oz) baby spinach

12 Pork Souvlaki Skewers, 3.5 oz each, prepared according to package directions

1 1/2 cups (12 oz) tzatziki sauce

1 1/2 cups (6.8 oz) crumbled feta cheese

 

 

 

Instructions:

 

1. Toss zucchini, peppers, eggplant and onion with dressing until well coated. Roast in 425°F oven for about 20 minutes or until browned around edges and tender. Let cool completely. Can be covered and refrigerated for up to 3 days.

 

2. On each bun, layer ingredients in the following order (bottom to top): 3 tbsp hummus, 1/3 cup spinach, 1/2 cup roasted vegetables, 1 portion pork (skewers removed), 2 tbsp tzatziki and 2 tbsp feta. Serve immediately or wrap each sandwich individually with plastic wrap and refrigerate for up to 1 day.

 

3. To Order, 1 portion: Serve fresh, chilled and wrapped, or place in panini press for about 3 minutes or until heated through and lightly toasted. 

 

 

Tips:

  • Use a flavored hummus, such as roasted red pepper, roasted garlic or chili pepper, for an extra punch of flavor.

  • Add fresh tomato slices and olives.  

  • Substitute tahini for the hummus.
