Serves: 50 portions; 1 #10 Ivory scoop serving size


Ingredients:

 

4 Kg (26 2/3 cups) of Carrots, diced, frozen
60 g (4 Tbsp) of Salt
600 mL (2 ½  cups) of Water
60 mL (4 Tbsp) of Lemon Juice
6 g (3 Tbsp) of Dill, dry
14 g (2 Tbsp) of Ginger, ground
1.35 Kg (9 cups) of Chickpea, canned - drained, rinsed

 

 

Directions:

  1. *WASH HANDS before beginning preparation & SANITIZE surfaces & equipment.
  2. Steam frozen carrots until soft.
  3. Add all ingredients into a food processor or blender. Blend until smooth. Keep chilled. CCP- Maintain <40F/4C. Discard unused product.
