Preheat oven to 400°F (205°C).
Brown ground beef fully, drain excess fat, season lightly with salt and pepper. Hold hot or cool for service.
Using a serrated knife, score the French loaf in a deep crosshatch pattern without cutting fully through the bottom.
Brush garlic spread generously into all cuts and over the exterior of the loaf.
Mix cheddar and mozzarella. Stuff cheese evenly into each cut, followed by cooked ground beef.
Place loaf on parchment-lined tray. Bake uncovered for 12–15 minutes until cheese is fully melted and bread is crisp.
Finish with a 1 oz ancho-chipotle drizzle over the top.
Serve immediately while hot and pull-apart ready.
