Greek Fries

A Mediterranean-inspired take on loaded fries featuring crispy seasoned fries, tangy feta, fresh red onion, aromatic oregano, and a bright lemon aioli. Finished with a fresh lemon wedge for guests to add citrus to taste.
Chef Build Instructions
Step 1 - Prepare the Fries
- Cook 8 oz of Fries until golden brown and crispy.
- Drain thoroughly to remove excess oil.
Step 2 – Season
Immediately while hot, toss the fries with:
- 3 g Greek One Step Seasoning
- ½ g Dried Oregano
The residual heat allows the herbs and seasoning to bloom, creating a fragrant, evenly seasoned fry.
Step 3 – Plate
Arrange the fries in a serving basket or shallow bowl, creating height rather than spreading them flat.
Step 4 – Garnish
Evenly distribute:
- 1 oz Crumbled Feta
- 15 g Finely Diced Red Onion
- Light sprinkle of Parsley Flakes
The feta should sit on top of the fries rather than melting completely, providing pockets of creamy, salty flavour in every bite.
Step 5 – Finish
- Serve with 2 oz Lemon Aioli in a ramekin.
- Garnish the plate with one fresh lemon wedge.

Encourage guests to squeeze the lemon over the fries immediately before eating to brighten the herbs and feta.
