Hummus

 

Serves: 50 portions; 1 #16 blue scoop serving size 


Ingredients:

 

2 Kg (10 cups) of Chickpea, canned, drained, washed
20 g (1 Tbsp) of Garlic, fresh
150 mL (⅔ cup) of Lemon Juice
10 g (1 Tbsp) of Cumin Powder
8 g (1 Tbsp) of Black Pepper, ground
150 mL (⅔ cup) of Olive Oil
150 mL (⅔ cup) of Water
15 g (1 Tbsp) of Salt

 

 

Directions:

  1. *WASH HANDS before beginning preparation & SANITIZE surfaces & equipment.
  2. Add all ingredients into blender or food processor. Blend until smooth. Keep chilled. CCP - maintain <40F/4C. Discard unused product.
  3. You may serve Hummus with bread or crackers.
