Savoury Italian Wedding Soup

 

 

A hearty and comforting classic featuring tender meatballs, pasta and fresh greens simmered in a rich, flavourful broth.

 

 

Ingredients for 12 Portions:

 

  • 12 oz meatballs
  • 1 lb onion, diced
  • 1 lb carrot, diced
  • ½ bunch celery, diced
  • 1 oz garlic, minced
  • 3 L water + 3 oz broth powder
  • 12 oz orzo
  • ½ lb spinach, chopped 

 

 

Directions:

 

  1. In a large soup pot, heat a small amount of oil over medium heat. Add the onion, carrots, and celery. Cook for 6–8 minutes, stirring occasionally, until the vegetables are softened but not browned
  2. Stir in the garlic and cook for 1-2 minutes until fragrant
  3. Pour in 3 litres of water and whisk in the broth powder until fully dissolved. Bring the mixture to a gentle simmer
  4. Add the meatballs to the simmering broth and cook for 10 minutes, allowing them to heat through and infuse the soup with flavour
  5. Stir in the orzo pasta and continue simmering for 8-10 minutes, or until the pasta is tender
  6. Add the spinach and stir until it wilts, about 1-2 minutes
  7. Taste the soup and adjust seasoning with salt and pepper as needed. Serve hot
